Low-Carb Cinnamon Protein Bars

Tasty and quick, this breakfast burrito will have you going to lunch time.
Ingredients
- 4 scoops (120g) vanilla whey protein powder (we used Vital Strength)
- 1/2 cup almond meal
- 2 tsp baking powder
- 1/4 tsp salt
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice
- 3 egg whites
- 1/4 cup Natvia (or other sugar substitute)
- 1/2 cup reduced fat cottage cheese
- 1 tsp vanilla extract
Method
- Spray an 8-by-8 inch Pyrex dish with non-stick spray.
- Preheat oven to 180oC/160oC fan forced. In a large bowl, combine protein powder, almond meal, baking powder, salt, cinnamon, nutmeg and allspice. Whisk together and set aside.
- In a smaller bowl, combine egg whites, Natvia, cottage cheese and vanilla. Whisk until well incorporated and then add the wet ingredients to the dry and mix again.
- Pour batter into the prepared dish and bake for 25 minutes or until a skewer comes out clean.
- Divide into 16 even portions and wrap each serve in cling wrap. Breakfast serving: 3 portions
